Ingredients:

  • ½ chickpea cane
  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • 1 zucchini
  • 1 tablespoon of oil
  • 2 teaspoons of curry
  • 1 teaspoon of paprika
  • 1 teaspoon ground turmeric
  • ¾ cup of vegetable broth
  • Salt and pepper
  • Fresh coriander

Steps :

  1. Cut into cubes all the vegetables.
  2. In a large skillet or wok, put the oil and heat over medium heat.
  3. Cook the vegetables 3-4 minutes.
  4. Add chickpeas, spices and vegetable broth.
  5. Simmer for 20 minutes.

Serve on basmati rice and add fresh coriander afterwards.
