Ingredients:
- ½ chickpea cane
- 1 onion
- 1 red pepper
- 1 green pepper
- 1 zucchini
- 1 tablespoon of oil
- 2 teaspoons of curry
- 1 teaspoon of paprika
- 1 teaspoon ground turmeric
- ¾ cup of vegetable broth
- Salt and pepper
- Fresh coriander
Steps :
- Cut into cubes all the vegetables.
- In a large skillet or wok, put the oil and heat over medium heat.
- Cook the vegetables 3-4 minutes.
- Add chickpeas, spices and vegetable broth.
- Simmer for 20 minutes.
Serve on basmati rice and add fresh coriander afterwards.
