Ingredients:

  • 6 red and white potatoes
  • 1 cup of water
  • ¼ cup chopped onions
  • 1 stalk of chopped celery
  • 1 tablespoon oregano
  • ½ cup mayonnaise
  • 1 teaspoon mustard
  • 1 tablespoon chives
  • 1 teaspoon of vinegar

Steps :

  1. Put the water and the potatoes in the pressure cooker. Cook at high pressure for 3 minutes or 4 minutes if they are large. For 3 minutes, let the pressure drop and suddenly release it and open the cover.
  2. Let the potatoes cool.
  3. Cut the potatoes and in a large bowl, alternate layers of potatoes, onions and celery. Salt and pepper.
  4. Combine mayonnaise, mustard and vinegar in a small bowl. Gently fold into the potatoes. Refrigerate for at least 1 hour before serving.
