Succulent potato salad recipe that is simple, quick and easy in the pressure cooker.

- 6 red and white potatoes
- 1 cup of water
- ¼ cup chopped onions
- 1 stalk of chopped celery
- 1 tablespoon oregano
- ½ cup mayonnaise
- 1 teaspoon mustard
- 1 tablespoon chives
- 1 teaspoon of vinegar
- Put the water and the potatoes in the pressure cooker. Cook at high pressure for 3 minutes or 4 minutes if they are large. For 3 minutes, let the pressure drop and suddenly release it and open the cover.
- Let the potatoes cool.
- Cut the potatoes and in a large bowl, alternate layers of potatoes, onions and celery. Salt and pepper.
- Combine mayonnaise, mustard and vinegar in a small bowl. Gently fold into the potatoes. Refrigerate for at least 1 hour before serving.
