Ingredients :

  • 1 cup unroasted cashews
  • 2 cups steamed squash
  • 2 cups sugar-free almond milk
  • 5 tablespoons of nutritional yeast
  • 1 tablespoon white vinegar
  • 3 tablespoons of oil
  • 2 garlic cloves, minced
  • 4 green onions, minced
  • ½ teaspoon paprika
  • ½ teaspoon oregano
  • ½ teaspoon turmeric
  • 2 tablespoons tomato paste
  • Salt and pepper
  • 4 cups macaroni-style pasta

Steps :

  1. Soak the cashews in water for 30 minutes. Drain and rinse thoroughly.
  2. Put all the ingredients except the pasta in a blender and mix until you get a smooth and homogeneous consistency.
  3. Cook pasta according to package directions so that it is al dente.
  4. Reheat the sauce in a large pot and mix the drained pasta in it, mixing well.
