Curry au pois chiche


  • 2 teaspoons vegetable oil
  • 1/2 cup chopped onion
  • 2 teaspoons of curry powder
  • 2 teaspoons of turmeric
  • 2 teaspoons of nutmeg
  • 1/2 cup of vegetable broth
  • 1 clove garlic chopped small
  • 4 tablespoons of coconut milk
  • 1 can of chickpeas
  • 1/2 cup of broccoli
  • 1/2 cup of cauliflower
  • 1/2 cup diced red pepper
  • 1/2 cup yellow pepper diced

Steps :

  1. In a frying pan or wok, sauté the onions in the oil.
  2. Add broccoli, cauliflower and peppers. Cook 5 minutes.
  3. Stir in broth, coconut milk, spices and curry powder.
  4. Simmer 15 minutes or until thick sauce to cover everything.
