Ingredients:
- 2 teaspoons vegetable oil
- 1/2 cup chopped onion
- 2 teaspoons of curry powder
- 2 teaspoons of turmeric
- 2 teaspoons of nutmeg
- 1/2 cup of vegetable broth
- 1 clove garlic chopped small
- 4 tablespoons of coconut milk
- 1 can of chickpeas
- 1/2 cup of broccoli
- 1/2 cup of cauliflower
- 1/2 cup diced red pepper
- 1/2 cup yellow pepper diced
Steps :
- In a frying pan or wok, sauté the onions in the oil.
- Add broccoli, cauliflower and peppers. Cook 5 minutes.
- Stir in broth, coconut milk, spices and curry powder.
- Simmer 15 minutes or until thick sauce to cover everything.
